  • 200g tomatoes
  • 1 tbsp coriander, chopped
  • 1 tbsp flat leaf parsley, chopped
  • 1 spring onion, finely chopped
  • 30g Co-op Somerset vintage mature Cheddar, grated
  • 1 large Co-op British egg yolk
  • 1/2 tsp English mustard
  • 2 pinches cayenne pepper
  • 1 tsp jalapeños, finely chopped
  • 2 slices Co-op Irresistible sourdough


  1. To make the salad, roughly chop the tomatoes, mix with the herbs and spring onion, then season to taste
  2. Preheat the grill, then mix the Cheddar with the egg yolk, mustard, cayenne and jalapeño
  3. Toast the sourdough on both sides, then spread with the cheese mixture and grill until melted and starting to brown
  4. Spoon some salad on top, to serve
