Ingredients
- 200g tomatoes
- 1 tbsp coriander, chopped
- 1 tbsp flat leaf parsley, chopped
- 1 spring onion, finely chopped
- 30g Co-op Somerset vintage mature Cheddar, grated
- 1 large Co-op British egg yolk
- 1/2 tsp English mustard
- 2 pinches cayenne pepper
- 1 tsp jalapeños, finely chopped
- 2 slices Co-op Irresistible sourdough
Method
- To make the salad, roughly chop the tomatoes, mix with the herbs and spring onion, then season to taste
- Preheat the grill, then mix the Cheddar with the egg yolk, mustard, cayenne and jalapeño
- Toast the sourdough on both sides, then spread with the cheese mixture and grill until melted and starting to brown
- Spoon some salad on top, to serve
