- 1 tbsp Co-op olive oil
- 150g Co-op chestnut mushrooms, thinly sliced
- 2 tbsp Co-op pesto
- 6 slices bruschetta
- Chopped chives (optional)
- Fry the mushrooms in the oil for 3 mins
- Stir in the pesto, then spoon over 6 slices bruschetta
- Top with some chopped chives, black pepper and a drizzle of olive oil, if you like.
