Ingredients

  • 1 tbsp Co-op olive oil
  • 150g Co-op chestnut mushrooms, thinly sliced
  • 2 tbsp Co-op pesto
  • 6 slices bruschetta
  • Chopped chives (optional)

Method

  1. Fry the mushrooms in the oil for 3 mins
  2. Stir in the pesto, then spoon over 6 slices bruschetta
  3. Top with some chopped chives, black pepper and a drizzle of olive oil, if you like.
