Ingredients

  • 75g Co-op unsalted butter, plus extra for greasing
  • 3 Co-op Fairtrade bananas, mashed
  • 2 tbsp Co-op clear honey
  • 50ml Co-op pure apple juice
  • 275g jumbo rolled oats
  • 80g pack Co-op dried mango, roughly chopped
  • 75g Co-op seedless raisins
  • Co-op mixed seeds
  • 100g pecan nuts, roughly chopped

Method

  1. Preheat the oven to 160°C/fan 140°C/gas 3
  2. Grease and line a 20cm square tin
  3. Heat the butter in a saucepan until melted, then mix in the bananas, honey and apple juice
  4. Put the oats, mango, raisins, mixed seeds and pecan nuts in a large bowl, then pour in the banana mix and stir to combine
  5. Press into the lined tin, packing down well
  6. Bake for 45-50 mins, until golden
  7. Allow to cool for 10 mins, then lightly score the outline of your slices to make it easier to cut later
  8. Leave to cool completely in the tin before slicing into 12 to serve
