  • 200g Co-op penne
  • 1 tbsp Co-op olive oil
  • 1 red onion, finely sliced
  • 1 clove garlic, sliced
  • 1/2 red chilli, finely chopped
  • 15g pine nuts
  • 15g sultanas
  • 250g cherry tomatoes, halved
  • 120g tin sardines, drained and roughly chopped
  • Handful fresh parsley, chopped (optional)
  • 1 lemon, cut into wedges


  1. Cook the pasta according to the pack instructions
  2. Meanwhile, heat the oil in a frying pan and cook the onion over a medium heat until softened
  3. Stir in the garlic and cook for 1-2 mins
  4. Add the chilli, pine nuts and sultanas and cook until the nuts turn golden
  5. Add the cherry tomatoes to the onion mixture and cook for 10 mins, tossing every now and then
  6. Stir in 2 tbsp of the pasta water to make a sauce then add the sardines to the pan
  7. Drain the pasta and stir into the sauce along with the parsley, if using
  8. Divide between 2 bowls and serve each with lemon wedges to squeeze over
