Ingredients
- 4 tsp Co-op ginger preserve
- 227g can pineapple slices, chopped, juice reserved
- 200g Co-op fat free Greek style yogurt
- 4 ginger biscuits, crushed
Method
- Put the ginger preserve in a bowl and add 1 tsp hot water
- Press down with the back of a spoon to melt slightly, then stir in 3 tbsp of the reserved pineapple juice, followed by the yogurt
- Divide half the pineapple between 2 glasses
- Top each with a quarter of the yogurt mixture, then a quarter of the crushed biscuits
- Repeat the layers, finishing with crushed biscuits
