  • 4 tsp Co-op ginger preserve
  • 227g can pineapple slices, chopped, juice reserved
  • 200g Co-op fat free Greek style yogurt
  • 4 ginger biscuits, crushed


  1. Put the ginger preserve in a bowl and add 1 tsp hot water
  2. Press down with the back of a spoon to melt slightly, then stir in 3 tbsp of the reserved pineapple juice, followed by the yogurt
  3. Divide half the pineapple between 2 glasses
  4. Top each with a quarter of the yogurt mixture, then a quarter of the crushed biscuits
  5. Repeat the layers, finishing with crushed biscuits
