Ingredients

  • 2 Co-op British pork loin steaks
  • 1 Co-op British apple, cored and cut into 6 wedges
  • 1 Co-op British leek, finely sliced
  • 2 tsp Co-op olive oil
  • 400g pack Co-op mashed potato
  • 40g Co-op Irresistible Somerset vintage Cheddar, grated
  • 150g Co-op British spring cabbage, shredded

Method

  1. Preheat the oven to 190°C/fan 170°C/Gas 5
  2. Brown the pork chops on both sides in a nonstick frying pan, then transfer to a roasting tin
  3. Add the apple wedges to the pan and stir to coat in the pork juices
  4. Tip into the roasting tin and cook in the oven for 20 mins
  5. Meanwhile, wipe out the pan and gently fry the leek in the oil for 10 mins, stirring occasionally
  6. Add the mash and heat through, stirring gently, then sprinkle over the cheese and stir together
  7. Boil the cabbage for 5 mins, then drain and divide between 2 plates
  8. Add a dollop of mash, a pork steak and some apple pieces
