Ingredients
- 1 tbsp Co-op olive oil
- 4 Co-op pork loin steaks
- 400g can Co-op cannellini beans, drained and rinsed
- 2 x 400g cans Co-op mixed bean salad, drained
- 400g can Co-op cut green beans, drained
- 100g Co-op green olives (about 30)
For the dressing:
- 3 tbsp Co-op Italian green pesto
- 1 tsp mixed herbs
- 2 tbsp Co-op olive oil
- ½ tbsp white wine vinegar
- 1 tsp Co-op lemon juice
Method
- Heat the oil in a large frying pan, over a medium heat, and cook the pork loin steaks for 3-4 mins each side, until golden and cooked through
- Meanwhile, mix together the beans, bean salad, green beans and olives
- Whisk the dressing ingredients with 1 tbsp water and pour into the salad, reserving a little for drizzling
- Serve the salad with the pork steaks and a drizzle of reserved dressing over the top
