This a great base recipe Just add some cooked noodles and some chicken or prawns for a more filling meal

  • Bunch of spring onions
  • 1 red chilli, deseeded
  • 2 cloves garlic
  • 1 tbsp Co-op olive oil
  • 250g bag Co-op sliced spring greens
  • 700ml vegetable stock
  • 1 tsp soy sauce
  • 1 tsp fish sauce
  • Juice 1 lime


  1. Trim and finely slice the spring onions, then finely chop the chilli and garlic
  2. Gently soften in a saucepan with the olive oil for a few mins
  3. Add the spring greens to the pan with all of the vegetable stock
  4. Simmer for a few mins, then add a splash of soy sauce and another of fish sauce, and the lime juice
  5. Serve with lime wedges, if you like
