  • 225g Co-op piccolo tomatoes, roughly chopped
  • 2 tbsp Co-op extra virgin olive oil
  • Few fresh basil leaves, torn (or 1/4 tsp dried basil or oregano)
  • Zest and juice of 1/2 lemon
  • 1 Co-op ciabatta roll, halved
  • 2 tbsp Co-op green pesto
  • 150g ricotta cheese (or mozzarella)


  1. Put the tomatoes, oil, herbs, lemon zest and juice into a bowl
  2. Season with black pepper and toss together
  3. Toast your ciabatta on the cut sides
  4. Spread with pesto and add a dollop of ricotta while still warm
  5. Top with the tomatoes and drizzle over any dressing left in the bowl
  6. Serve straight away
