Ingredients

  • 600g Co-op British strawberries, hulled and chopped
  • 30g caster sugar, plus extra for dusting (optional)
  • 6 Co-op British free range eggs
  • 4 tbsp Co-op semi-skimmed milk
  • Zest of 1 orange
  • 4 slices Co-op farmhousewhite loaf, halved diagonally
  • 10g Co-op unsalted butter
  • 8 tbsp 0% fat Co-op Greek style natural yogurt
  • 1 tsp vanilla extract

Method

  1. Preheat the oven to 180°C/fan 160°C/Gas 4 and line a baking tray with greaseproof paper
  2. Toss the strawberries in a bowl with the caster sugar and spread out across the prepared baking tray
  3. Roast for 25 mins, until the strawberries are soft and the sugar has melted into a syrup
  4. Put the fruit in a sieve over a bowl, to catch the syrup
  5. Cover with foil and leave for 5 mins
  6. Meanwhile, beat the eggs and milk in a bowl, then stir in the orange zest
  7. Stir the syrup into the egg mixture, then pour into a large, shallow dish and lay out the bread pieces to soak for 3 mins on each side
  8. Turn the oven down to its lowest temperature and heat a frying pan
  9. Melt the butter, then add half the bread slices and fry for 2 mins each side, until golden
  10. Transfer to a tray and keep warm in the oven while you fry the other slices
  11. Mix the yogurt with the vanilla extract, spread over half the slices, then top with some strawberry pieces and the remaining slices of toast
  12. Serve with a dusting of caster sugar, if you like
