
Roasted strawberry french toast

Ingredients
- 600g Co-op British strawberries, hulled and chopped
- 30g caster sugar, plus extra for dusting (optional)
- 6 Co-op British free range eggs
- 4 tbsp Co-op semi-skimmed milk
- Zest of 1 orange
- 4 slices Co-op farmhousewhite loaf, halved diagonally
- 10g Co-op unsalted butter
- 8 tbsp 0% fat Co-op Greek style natural yogurt
- 1 tsp vanilla extract
Method
- Preheat the oven to 180°C/fan 160°C/Gas 4 and line a baking tray with greaseproof paper
- Toss the strawberries in a bowl with the caster sugar and spread out across the prepared baking tray
- Roast for 25 mins, until the strawberries are soft and the sugar has melted into a syrup
- Put the fruit in a sieve over a bowl, to catch the syrup
- Cover with foil and leave for 5 mins
- Meanwhile, beat the eggs and milk in a bowl, then stir in the orange zest
- Stir the syrup into the egg mixture, then pour into a large, shallow dish and lay out the bread pieces to soak for 3 mins on each side
- Turn the oven down to its lowest temperature and heat a frying pan
- Melt the butter, then add half the bread slices and fry for 2 mins each side, until golden
- Transfer to a tray and keep warm in the oven while you fry the other slices
- Mix the yogurt with the vanilla extract, spread over half the slices, then top with some strawberry pieces and the remaining slices of toast
- Serve with a dusting of caster sugar, if you like
