Ingredients
- 1/2 swede, peeled and diced
- 2 turnips, peeled and diced
- 1 tbsp Co-op olive oil
- 1 tbsp Co-op runny honey (optional)
- 1 tbsp chilli flakes (optional)
- 200g tortilla chips
- 200g Co-op mild salsa
- 1/2 Co-op ripe and ready to eat avocado, peeled, stoned and diced
- 50g Co-op reduced fat Cheddar, grated
Method
- Preheat the oven to 200C/fan 180C/Gas 6
- Place the swede and turnip in a shallow roasting tray and toss in the olive oil. Roast in the oven for 30 mins, stirring halfway through
- Drizzle with the honey and chilli flakes, if using, and cook for 5 mins more, until soft and golden
- Heat the grill to medium-high
- Pour the tortilla chips into an ovenproof dish, scatter with the roasted veg, then spoon over the salsa and avocado chunks
- Scatter with the grated cheese and place under the grill for 2-3 mins, until melted
- Double up the ingredients for a great shared snack when you have friends over in the evening
