  • 400g can Co-op Loved by Us butterbeans, drained and rinsed
  • 125g tomato salsa
  • 65g Co-op mature Cheddar, grated
  • 4 flour tortillas


  1. Put the beans and salsa in a bowl and mash with a fork to break down the beans slightly - you still need to have some whole ones
  2. Mix in the cheese and spread on 2 of the tortillas
  3. Cover with the other tortillas
  4. Cook the quesadillas, one at a time, over a low to medium heat, for 2-3 minutes on each side, until the tortillas are golden brown at the bottom and the cheese is melted
  5. Cut into quarters and serve with salad
