
Sardines on sourdough toast

Ingredients
- 1 1/2 tbsp Co-op olive oil
- 1/2 red pepper, deseeded and thinly sliced
- 400g can butter beans, drained
- 1/2 x 400g can Co-op cherry tomatoes in tomato juice
- 1 tsp paprika
- 120g can Co-op sardines in tomato sauce
- 4 slices Co-op Irresistible sourdough bread
Method
- Heat 1 tbsp of the oil over a medium heat and fry the pepper for 3 mins
- Add the butter beans and tomatoes, then cook for 10 mins
- Stir in the paprika and season to taste
- Add the sardines, breaking them up a bit with a spoon, and cook for a further 3 mins
- Meanwhile, toast the bread
- To serve, drizzle the toast with the remaining oil, then spoon the sardine and bean mixture on top
