Sardines on sourdough toast

  • 1 1/2 tbsp Co-op olive oil
  • 1/2 red pepper, deseeded and thinly sliced
  • 400g can butter beans, drained
  • 1/2 x 400g can Co-op cherry tomatoes in tomato juice
  • 1 tsp paprika
  • 120g can Co-op sardines in tomato sauce
  • 4 slices Co-op Irresistible sourdough bread


  1. Heat 1 tbsp of the oil over a medium heat and fry the pepper for 3 mins
  2. Add the butter beans and tomatoes, then cook for 10 mins
  3. Stir in the paprika and season to taste
  4. Add the sardines, breaking them up a bit with a spoon, and cook for a further 3 mins
  5. Meanwhile, toast the bread
  6. To serve, drizzle the toast with the remaining oil, then spoon the sardine and bean mixture on top
