  • 100g Co-op unsalted butter, softened
  • 50g golden caster sugar
  • 2 tsp vanilla extract
  • 150g Co-op plain flour
  • 25g cornflour
  • Pinch of baking powder


  1. Heat the oven to 180°C/fan 160°C/Gas 4
  2. Cream together the butter, sugar and vanilla
  3. Add flour, cornflour and baking powder and mix together.Make into a ball and then flatten on the baking paper into a 20cm round
  4. Using a knife, lightly score out 8 triangles
  5. Prick all over with a fork for decoration, and sprinkle with a little extra sugar
  6. Bake for 15-20 mins, until lightly golden
