
Singapore fried rice

Ingredients
- 280g Co-op long grain brown rice
- 1 tbsp medium curry powder
- 320g savoy cabbage
- 3 Co-op British eggs, beaten
Method
- Cook the rice according to the pack instructions
- Meanwhile, heat 1 tbsp vegetable oil in a frying pan and gently fry the curry powder for 1 minute
- Add the cabbage, turn up the heat a little and stir fry for 3 mins
- Add 4 tbsp water, cover the pan and cook for another 2 mins, then remove the lid and simmer until the liquid has evaporated
- Add the cooked rice, make a well in the centre and pour in 1 tsp oil
- Add the egg and stir until lightly scrambled, then season and mix with the rice.
