Ingredients
- 330g Co-op Jersey Royals
- 1 tbsp oil
- 2 x 150g Co-op applewood smoked beef steaks
- 75g beetroot, sliced
- 3 carrots, grated or spiralised
- 2 apples, grated
- Juice of 1/2 lemon
- 2 tbsp Co-op balsamic dressing
- 1 tbsp Co-op wholegrain mustard
- Handful of watercress (optional)
Method
- Boil the Jersey Royals for 15 mins, then drain and cool
- Drizzle a little oil on the steaks, griddle in a hot pan for 1-2 mins each side, then allow to rest
- Halve any larger potatoes and divide between 2 jars
- Layer up with the beetroot, the grated or spiralised carrots and the grated apples
- Add a squeeze of lemon then top with sliced steak, and watercress if you like
- Mix the balsamic dressing with the mustard for each jar and pour over before eating
