  • 330g Co-op Jersey Royals
  • 1 tbsp oil
  • 2 x 150g Co-op applewood smoked beef steaks
  • 75g beetroot, sliced
  • 3 carrots, grated or spiralised
  • 2 apples, grated
  • Juice of 1/2 lemon
  • 2 tbsp Co-op balsamic dressing
  • 1 tbsp Co-op wholegrain mustard
  • Handful of watercress (optional)


  1. Boil the Jersey Royals for 15 mins, then drain and cool
  2. Drizzle a little oil on the steaks, griddle in a hot pan for 1-2 mins each side, then allow to rest
  3. Halve any larger potatoes and divide between 2 jars
  4. Layer up with the beetroot, the grated or spiralised carrots and the grated apples
  5. Add a squeeze of lemon then top with sliced steak, and watercress if you like
  6. Mix the balsamic dressing with the mustard for each jar and pour over before eating
