Spicy cauli and corn wraps

  • 1/2 cauliflower, broken into small florets
  • 325g can Co-op sweetcorn, drained
  • 1/2 red onion, sliced
  • 1 clove garlic, crushed
  • 1/2 green pepper, deseeded and sliced
  • 1 tsp smoked paprika
  • 1 tbsp Co-op olive oil
  • 2 tsp hot sauce
  • 4 Co-op tortilla wraps
  • 2 tbsp sour cream (optional)
  • 2 tbsp Co-op guacamole (optional)


  1. Preheat the oven to 220°C/fan 200°C/Gas 7
  2. Put the cauliflower, sweetcorn, onion, garlic, pepper, paprika and oil in a roasting tray
  3. Season, toss to coat, then spread out evenly
  4. Roast for 20-25 mins, turning halfway, until the veg is tender, golden and lightly charred
  5. Once the vegetables have cooked, stir through the hot sauce, adjusting to taste
  6. Lay out the tortilla wraps and divide the veg between them
  7. Add dollops of sour cream and guacamole, if using, then fold up and serve.
