Crispy crumbs of British streaky bacon add a meaty bite to this fresh dish

  • 150g Co-op penne
  • 1 tbsp pine nuts
  • 2 rashers Co-op British smoked rindless streaky bacon
  • 125g Co-op spinach
  • 3 tbsp Co-op pesto
  • 1 tbsp Co-op olive oil
  • Freshly ground black pepper
  • 80g shelled Co-op British peas
  • 2 spring onions, sliced
  • 30g Co-op Parmesan, shaved
  • 8 Co-op British piccolo tomatoes, halved


  1. Cook the pasta according to the instructions on the packaging
  2. Drain and leave to cool
  3. Meanwhile, toast the pine nuts in a dry pan for about 3 mins over a medium heat, stirring regularly, then set aside
  4. Add the bacon to the pan, fry until crispy and leave to cool
  5. Blend together the spinach, pesto and olive oil, season with pepper, then mix into the pasta, adding the peas and onions
  6. Arrange the pasta in a serving dish and crumble over the bacon and add the pine nuts, Parmesan and tomatoes
