  • 150g tenderstem broccoli
  • 1 tsp Co-op olive oil
  • 1 Co-op British leek, trimmed and finely sliced
  • 2 Co-op flour tortillas
  • 1/2 x 400g can chopped tomatoes
  • 60g Co-op Irresistible Somerset vintage Cheddar, grated


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Cook the broccoli in a pan of boiling water for 6 mins or until tender, drain and set aside
  3. Meanwhile, heat the oil in a large frying pan and add the leek
  4. Season, then cook for 5 mins, stirring occasionally, until soft
  5. To assemble the pizza, sit the tortillas on a baking sheet, then spread over the chopped tomato, leaving a 2cm border
  6. Top with the broccoli and leek, then scatter over the cheese
  7. Bake for 3-5 mins, until the base is crisp and the cheese has melted.
