Ingredients
- 150g tenderstem broccoli
- 1 tsp Co-op olive oil
- 1 Co-op British leek, trimmed and finely sliced
- 2 Co-op flour tortillas
- 1/2 x 400g can chopped tomatoes
- 60g Co-op Irresistible Somerset vintage Cheddar, grated
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Cook the broccoli in a pan of boiling water for 6 mins or until tender, drain and set aside
- Meanwhile, heat the oil in a large frying pan and add the leek
- Season, then cook for 5 mins, stirring occasionally, until soft
- To assemble the pizza, sit the tortillas on a baking sheet, then spread over the chopped tomato, leaving a 2cm border
- Top with the broccoli and leek, then scatter over the cheese
- Bake for 3-5 mins, until the base is crisp and the cheese has melted.
