  • 500g sweet potatoes
  • 1 tbsp Co-op olive oil
  • 270g pack reduced fat Co-op British beef mince meatballs
  • 2 shallots, peeled and chopped
  • Handful dill, chopped, or 1 tsp dried, plus extra to garnish
  • 1 tsp wholegrain mustard
  • 200ml reduced fat crème fraîche


  1. Peel the sweet potatoes and cut into chunks
  2. Cook in a pan of boiling water for 15 mins, or until tender, drain and mash well
  3. Meanwhile, heat the oil in a nonstick pan and add the meatballs and shallots
  4. Fry for 10 mins, turning regularly until evenly browned
  5. Stir in the dill, mustard and crème fraîche and heat through, but don’t allow to boil
  6. Divide the sweet potato between 2 plates, top with the meatballs and sauce, and garnish with a little extra dill
