Ingredients
- 500g sweet potatoes
- 1 tbsp Co-op olive oil
- 270g pack reduced fat Co-op British beef mince meatballs
- 2 shallots, peeled and chopped
- Handful dill, chopped, or 1 tsp dried, plus extra to garnish
- 1 tsp wholegrain mustard
- 200ml reduced fat crème fraîche
Method
- Peel the sweet potatoes and cut into chunks
- Cook in a pan of boiling water for 15 mins, or until tender, drain and mash well
- Meanwhile, heat the oil in a nonstick pan and add the meatballs and shallots
- Fry for 10 mins, turning regularly until evenly browned
- Stir in the dill, mustard and crème fraîche and heat through, but don’t allow to boil
- Divide the sweet potato between 2 plates, top with the meatballs and sauce, and garnish with a little extra dill
