Ingredients

  • 220g pack Co-op Scottish salmon fillets
  • 4 tbsp sweet chilli sauce
  • 1 tbsp lime juice 100g egg noodles
  • 240g pack Co-op Loved by Us broccoli, carrots, baby corn and sugar snaps
  • 1 tbsp sunflower oil

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Cut 2 squares of foil, about 30cm square each, and put a piece of salmon in the middle of each
  3. Mix 2 tbsp sweet chilli sauce with the lime juice and drizzle it over the fish
  4. Fold up the foil to make 2 parcels with tightly sealed edges but room inside for the air to circulate
  5. Put on a baking tray and set aside for 10 minutes
  6. Meanwhile, cook the egg noodles just like it says on the pack, then drain in a colander
  7. Cut each broccoli floret into 2 or 3 smaller pieces
  8. Put the fish parcels in the oven and cook for 15 minutes or until the fish is cooked
  9. While they are cooking, heat the oil in a wok and stir fry the vegetables for 3-4 minutes
  10. Add the noodles and remaining sweet chilli sauce and stir fry until heated through
