Ingredients
- 2 sweet potatoes
- 1 tbsp Co-op olive oil
- 1 onion, finely chopped
- 400g can Co-op chick peas, drained and rinsed
- 1½ tbsp curry powder
- 100g Co-op 0% fat Greek style natural yogurt
- 2 tbsp roughly chopped coriander (optional)
Method
- Heat the oven to 200°C/fan 180°C/Gas 6
- Put the sweet potatoes on a foil-lined baking tray and bake for 50 mins to 1 hour, until tender
- About 15 mins before the potatoes are ready, heat the oil in a frying pan and cook the onion over a medium heat for 4-5 mins, until softened
- Stir in the chick peas, along with a splash of water, cover and cook for 5 mins
- Add the curry powder and cook for another minute, then take off the heat
- Stir in the yogurt and season
- Cut the sweet potatoes in half and top with the chick pea mixture
- Scatter with the chopped coriander to finish, if you like
