
Teriyaki minced beef stir fry

A quick beef stir fry made better with an easy homemade sauce

Ingredients
- 1 tbsp sesame seeds (optional)
- 1 tbsp vegetable oil
- 1/2 x 500g pack Co-op 5% fat British lean beef steak mince
- 175g pack baby corn and sugar snap peas
- 1 red onion, sliced
- 80ml teriyaki sauce
- 100g beansprouts
- 1 Co-op British pak choi
- 150ml beef stock
Method
- Toast the sesame seeds, if using, in a dry pan for 3-5 mins, then tip onto a plate and set aside
- Heat the oil in the pan and brown the mince for 10 mins
- Halve the baby corn lengthways and add to the pan along with the sugar snap peas and red onion
- Fry for 3 more mins
- Add the teriyaki, beansprouts, pak choi and stock
- Bring to the boil, simmer for 5 mins then serve scattered with the toasted seeds
