A quick beef stir fry made better with an easy homemade sauce

  • 1 tbsp sesame seeds (optional)
  • 1 tbsp vegetable oil
  • 1/2 x 500g pack Co-op 5% fat British lean beef steak mince
  • 175g pack baby corn and sugar snap peas
  • 1 red onion, sliced
  • 80ml teriyaki sauce
  • 100g beansprouts
  • 1 Co-op British pak choi
  • 150ml beef stock


  1. Toast the sesame seeds, if using, in a dry pan for 3-5 mins, then tip onto a plate and set aside
  2. Heat the oil in the pan and brown the mince for 10 mins
  3. Halve the baby corn lengthways and add to the pan along with the sugar snap peas and red onion
  4. Fry for 3 more mins
  5. Add the teriyaki, beansprouts, pak choi and stock
  6. Bring to the boil, simmer for 5 mins then serve scattered with the toasted seeds
