Ingredients
- 150g Co-op easy cook long grain brown rice
- 2 tbsp sunflower oil
- 1 onion, peeled and chopped
- 200g carrots, peeled and sliced
- 1 red pepper, deseeded and cut into 2cm pieces
- 340g jar Co-op tomato and chilli pasta sauce
- 405g can Co-op red kidney beans in chilli tomato sauce
Method
- Cook the rice just like it says on the pack
- Meanwhile, heat the oil in another saucepan, add the onion and carrots and stir, then cover the pan and cook over a very low heat for 7-8 minutes, stirring occasionally
- Add the red pepper and pasta sauce, cover the pan and simmer gently for 10 minutes
- Add the beans in chilli sauce and simmer for another 5 minutes
- Drain the rice and serve with the chilli
