  • 150g Co-op easy cook long grain brown rice
  • 2 tbsp sunflower oil
  • 1 onion, peeled and chopped
  • 200g carrots, peeled and sliced
  • 1 red pepper, deseeded and cut into 2cm pieces
  • 340g jar Co-op tomato and chilli pasta sauce
  • 405g can Co-op red kidney beans in chilli tomato sauce


  1. Cook the rice just like it says on the pack
  2. Meanwhile, heat the oil in another saucepan, add the onion and carrots and stir, then cover the pan and cook over a very low heat for 7-8 minutes, stirring occasionally
  3. Add the red pepper and pasta sauce, cover the pan and simmer gently for 10 minutes
  4. Add the beans in chilli sauce and simmer for another 5 minutes
  5. Drain the rice and serve with the chilli
