  • 10 frozen potato waffles
  • ½ x 225g Co-op chorizo ring, sliced
  • 6 ripe Co-op salad tomatoes, roughly chopped
  • ½ tbsp white wine vinegar
  • 2 tbsp Co-op vegetable oil
  • 6 Co-op British free range eggs
  • ½ x 200g pack Co-op Feta, crumbled
  • 2 Co-op ripe & ready to eat avocados, sliced
  • ½ x 25g pack coriander, chopped, plus extra to garnish
  • 1 small red onion, finely chopped
  • 198g can Co-op sweetcorn, drained
  • Zest and juice of ½ lime


Start by making the salsa: 1. Combine all the ingredients in a bowl and set aside 2. Cook the waffles according to the pack instructions and whilst they are cooking

Make a sauce: 3. Dry fry the chorizo over a medium heat in a nonstick pan for 1-2 mins 4. Add the tomato and vinegar, then cook for 8-10 mins, until you have a chunky sauce 5. Heat the oil in a frying pan and fry the eggs 6. To serve, tear up the waffles, then layer with the salsa, chorizo sauce and Feta 7. Top with the fried eggs and avocado, and finish with a sprinkling of coriander
