Ingredients
- 2 tsp Co-op olive oil
- 1 tbsp fajita seasoning mix
- 2 Co-op British chicken breasts, cut into large chunks
- 2 tbsp Co-op 0% fat Greek style natural yogurt
- 1 tbsp light mayonnaise
- 2 tsp lime juice
- 50g Co-op British red cabbage, finely shredded
- 50g Co-op British white cabbage, finely shredded
- 25g Co-op British carrot, coarsely grated
- 2 wholewheat tortilla wraps
Method
- Heat the oil in a pan
- Add the seasoning and chicken
- Stir to coat, add 2 tbsp water, then cover and cook on low for 30 mins, until tender
- Meanwhile, mix the yogurt with the mayonnaise and lime juice and season to taste
- Stir in the red and white cabbage and the carrot
- Drain any liquid from the chicken, then use 2 forks to shred it
- Divide the meat and slaw between the wraps and roll up to serve
