  • 25g Co-op desiccated coconut
  • 1 tbsp Co-op vegetable oil
  • 1 red pepper, finely sliced
  • 120g pack Co-op mangetout
  • 1 tbsp Co-op mango chutney
  • 1 tbsp Co-op light soy sauce
  • 1 tsp sesame oil
  • Zest and juice of ½ lime
  • 2cm ginger, grated
  • 250g pack Co-op fresh egg noodles
  • 150g Co-op cooked king prawns
  • 2 tbsp chopped coriander


  1. In a large nonstick frying pan, toast the coconut over a medium heat until golden, then transfer to a bowl and set aside
  2. Heat the oil in the same pan and cook the pepper for 3-4 mins, until beginning to soften
  3. Add the remaining ingredients except the coriander and cook for 2-3 mins, stirring, until piping hot
  4. Stir through half the toasted coconut and half the coriander, then divide between two plates and garnish with the remaining coconut and coriander to serve
