Ingredients
- 25g Co-op desiccated coconut
- 1 tbsp Co-op vegetable oil
- 1 red pepper, finely sliced
- 120g pack Co-op mangetout
- 1 tbsp Co-op mango chutney
- 1 tbsp Co-op light soy sauce
- 1 tsp sesame oil
- Zest and juice of ½ lime
- 2cm ginger, grated
- 250g pack Co-op fresh egg noodles
- 150g Co-op cooked king prawns
- 2 tbsp chopped coriander
Method
- In a large nonstick frying pan, toast the coconut over a medium heat until golden, then transfer to a bowl and set aside
- Heat the oil in the same pan and cook the pepper for 3-4 mins, until beginning to soften
- Add the remaining ingredients except the coriander and cook for 2-3 mins, stirring, until piping hot
- Stir through half the toasted coconut and half the coriander, then divide between two plates and garnish with the remaining coconut and coriander to serve
